The invention relates to a machine for extracting mucus from gastropods, in particular snails, according to a process comprising the following steps: - putting the gastropods in nets, - soaking the fillets in water, - removing the fillets from the water at the end of a soaking period not exceeding 20 minutes, - mechanically stir the fillets so as to cause gentle friction of the gastropods with each other, capable of triggering a secretion of mucus, while recovering the mucus which is flows from the nets. L'invention concerne une machine d'extraction de mucus de gastéropodes, notamment des escargots, selon un procédé comportant les étapes suivantes : - mettre les gastéropodes dans des filets, - tremper les filets dans de l'eau, - sortir les filets de l'eau à la fin d'une période de trempage n'excédant pas 20 mn, - agiter mécaniquement les filets de façon à provoquer une friction douce des gastéropodes entre eux, apte à déclencher une sécrétion de mucus, tout en récupérant le mucus qui s'écoule des filets.
