The invention relates to an ecological process for cultivating the species Pleurotus eryngii in open space, in two cycles per year, in small farmers' gardens, by using the farm agricultural wastes and the unused agricultural field portions, with a maximum yield of 1.93 kg of mushrooms/ 1 square meter.
