Soy extracts encapsulated with oligosaccharides and processes for making theencapsulated soy extracts. The processes generally comprise combining a soyextract solution and an oligosaccharide solution to encapsulate the soy extractwith the oligosaccharide, precipitation of the encapsulated soy extract solutionto form sediment, centrifugation, ion exchange to remove ionic components anddrying. Soy extracts encapsulated in the process include isoflavone derivatives,such as daidzin, glycitin, genistin, daidzein, glycitein and genistein, whichmay be encapsulated with αr-cyclodextrin, β-cyclodextrin, y-cyclodextrinor combinations of these oligosaccharides.
