PURPOSE: A fermented adlay extract for preventing and treating rheumatoid arthritis and a method for preparing the same are provided to ensure excellent antioxidation activity and to enhance anti-inflammatory factor generation. CONSTITUTION: A fermented adlay extract is used for preventing and treating rheumatoid arthritis. Bacteria used for fermentation are malt, yeast, or a combination thereof. The extract suppresses the expression of inflammatory factors and rheumatoid factors. A health functional food composition for preventing and treating rheumatoid arthritis contains the extract. A method for preparing the extract comprises: a step of steaming adlay; a step of adding malt, yeast, or the combination thereof to the steamed adlay, and fermenting; and a step of concentrating the fermented adlay.
