PROBLEM TO BE SOLVED: To provide a high-nutrient dry food for elderly people and people with difficulty in mastication and swallowing, capable of improving such physical properties and low nutrition of paste-like food as stickiness and loose firmness inappropriate for mastication, capable of providing high nutrition with a small amount, and having such physical properties suitable for mastication as low adhesiveness while having crunchy texture when hot water is added to the food to make the food paste-like food.SOLUTION: Dough containing proteins and starch is swollen and dried with microwaves, so that the hardness of paste when hot water is added is 1,500-5,000 N/M2, and the adhesiveness is 1,500 J/M3 or lower.COPYRIGHT: (C)2013,JPO&INPIT【課題】本発明は、嚥下に適していないベタベタとした食べ応えのないペースト状食品の物性及び低栄養化を解決し、少量で高栄養が摂取可能であり且つ熱湯を加えペースト状食品とした際、食べ応えがありながらも付着性が低い嚥下に適した物性を有した高齢者及び咀嚼、嚥下困難者向け高栄養乾燥食品を提供することを目的とするものである。【解決手段】蛋白質や澱粉を含有した生地をマイクロ波により膨化・乾燥させ、熱湯を加えた際のペーストの硬さを1,500~5,000N/M2、付着性が1,500J/M3以下とすることで上記課題を解決する。【選択図】なし
