The present invention relates to a method for manufacturing less stinky skate liver soup containing barley and, more specifically, to a method for manufacturing less stinky skate liver soup containing barley in which the unpleasant smell of pungent skate due to ammonium is suppressed. The method comprises a raw material preparation step and a soup manufacturing step. The raw material preparation step includes the steps of: extracting cartilage, internal organs, and a liver from skate fermenting a portion of the cartilage, the liver and the internal organs while quenching the other portion of the cartilage and the liver producing liver soup sauce and preparing barley sprouts by quickly cooling the barley sprouts, which have been branched in water.
