The press has a perforated cylindrical pressing corridor (100) closed at one end by a perforated drain door and closed at the other end by a pressing member (200) that moves in translation along an axis of the corridor. The pressing body includes two mobile perforated plates (210, 220), where a section of the corridor is fully occupied by the plates. The pressing corridor is provided with stiffening rods (120) arranged between the drain door and the pressing member. An independent claim is also included for a method for pressing fruits in a press.L'invention concerne un pressoir comportant un couloir de pressurage 100 ajouré, ce couloir cylindrique étant obturé à une de ses extrémités par une porte de vidange ajourée 300 et à son autre extrémité par un organe de pressurage 200 mobile en translation selon l'axe de ce couloir 100. De plus, l'organe de pressurage 200 comporte au moins deux plateaux mobiles ajourés 210, 220, la section du couloir de pressurage étant totalement occupée par ces plateaux. L'invention vise également un procédé de pressurage au moyen d'un pressoir tel que spécifié ci-dessus.
