The present invention relates to a process for the partial and differential extraction that leads to obtaining extracts with appreciable amounts of antioxidants from fruits of palm trees of the genus Euterpe. The process comprises the steps of collecting the fruit, solid-liquid extraction (pulping 1) of the antioxidant compounds, softening and / or maceration of pulp and solid-liquid extraction (pulping 2 and / or 3) to obtain a standardized juice comprising both hydrophilic and lipophilic antioxidants, and an oily fraction. The process of the present invention also extends to a partial purification of the crude aqueous extract produced by the technique of adsorption on macroporous resins, resulting in higher purity extract of antioxidants. The extract or powder obtained after drying can be used in the food industry, cosmetics, pharmaceutical and herbal areas due to the physiological properties thereof.La présente invention concerne un procédé d'extraction partielle et différentielle qui permet d'obtenir des extraits ayant des quantités appréciables d'antioxydants à partir de palmiers du genre Euterpe. Le procédé comprend les étapes consistant en la récolte des fruits, une extraction solide-liquide (mise en pulpe 1) des composés antioxydants, le ramollissement et/ou la macération de la pulpe et une extraction solide-liquide (mise en pulpe 2 et/ou 3) pour obtenir un jus normalisé comprenant des antioxydants à la fois hydrophiles et lipophiles, et une fraction huileuse. Le procédé de la présente invention concerne également une purification partielle de l'extrait aqueux brut produit par la technique d'adsorption sur des résines macroporeuses, aboutissant à un extrait d'antioxydants de pureté plus élevée. L'extrait ou la poudre obtenu(e) après séchage peut être utilisé(e) dans l'industrie agroalimentaire, les cosmétiques, les domaines pharmaceutique et des herbes aromatiques en raison de ses propriétés physiologiques.
