The present invention relates to a method for preparing ergothioneine-containing extract from mushroom fruiting bodies, comprising treating the air-dried powder of fruiting bodies with 20-folded water volume (pre-heated to 75℃), at a rotation speed of 125 rpm for 5 min. The extract is further spray dried with maltodextrin to form an ergothioneine-containing extract spray dried powder, having physiologically active components still maintained after in vitro simulated stomach and intestine digestion analysis.本發明係關於一種以菇類子實體製備含高麥角硫因萃取物乾燥粉末的方法,包含將菇類子實體風乾物粉末以熱水萃取法(萃取溶劑為樣品之20倍、萃取溶劑預熱至75℃、振盪旋轉速度125rpm、萃取5min)獲得含高麥角硫因萃取物,再以1:1比例添加麥芽糊精為賦形劑,並經噴霧乾燥技術,而得到含高麥角硫因之萃取物粉末。根據本發明所製得之含高麥角硫因萃取物的乾燥粉末,其中的活性物質能夠通過體外模擬腸胃道消化而仍能保留其中的活性物質,適合應用於做為食品添加劑或免疫增強劑製備保健食品。
