This invention relates to a hydrolysate composition isolated from a meat source characterised in that, the hydrolysate contains 60 to 90% w/w protein which has a moisture level of below 20%. The meat source is preferably obtained from lamb and the hydrolysate preferably consists predominantly of peptides of molecular weight less than 1000 Daltons and contains less than 10% w/w of fat.La présente invention concerne une composition dhydrolysat isolée dune source carnée.
