A process to be anaesthetised of the fish to the carbon dioxide, which are placed in contact with the fish with a water having a concentration of dissolved co2, which is characterized by the implementation of the following measurements: - the fish are anaesthetized in the basin of life or else have been transferred into a tank (1) of specific (anaesthetics), where they undergo anaesthesia； - the dope said basin in a buffer salt such as sodium hydrogen carbonate, with a dose, preferably greater than 500 mg / l) - (4) is injected and then of the co2, either directly in said basin or more preferably in a loop (2) of recirculation of the water of the pool； - was controlled (7) the quantity of co2 is injected in order to achieve a concentration of dissolved co2 in said basin or in the recirculation loop of the water of the said basin.Un procédé pour anesthésier des poissons au Dioxyde de Carbone, où l'on met en contact les poissons avec une eau possédant une concentration en CO2 dissous,se caractérisant par la mise en oeuvre des mesures suivantes :- les poissons sont anesthésiés dans leur bassin de vie habituel ou bien ont été transférés dans un bassin (1) spécifique (bassin d'anesthésie) où ils subiront l'anesthésie ；- on dope ledit bassin en un sel tampon tel que l'hydrogénocarbonate de sodium, avec une dose préférentiellement supérieure à 500 mg/l ；- on injecte (4) ensuite du CO2, soit directement dans ledit bassin soit plus préférentiellement dans une boucle (2) de recirculation de l'eau dudit bassin ；- on régule (7) la quantité de CO2 injectée pour atteindre une concentration en CO2 dissous souhaitée dans ledit bassin ou dans ladite boucle de recirculation de l'eau dudit bassin.
