PROBLEM TO BE SOLVED: To provide a process for production of an extruded matter including an oil-in-water type emulsion drop including at least one kind of lipid soluble compound, at least one kind of emulsifier and water.SOLUTION: The process for production of an extruded matter is provided in which emulsification is performed in an extruder, an emulsifier, water and a lipid soluble compound are added from different introduction ports of the extruder arranged apart each other, the emulsifier is added first, and then water is added, then the lipid soluble compound is added.
