PROBLEM TO BE SOLVED: To provide a quality holding agent for an oil-in-water type emulsifier capable of suppressing the oxidation of oil while exhibiting a high emulsification stabilization action with component derived from natural matter, and to provide fat-containing composition using the quality holding agent.SOLUTION: Provided is a quality holding agent for an oil-in-water type emulsifier comprising siderophore as an active ingredient, having an action of stabilizing the emulsified state of an oil-in-water type emulsifier, and further having an action of suppressing the oxidation of the oil-in-water type emulsifier, and the siderophore being deferriferrichrysin.
