PROBLEM TO BE SOLVED: To efficiently produce &gamma-aminobutyric acid in a short time by reacting a high-concentration solution or dispersion of glutamic acid or a glutamate with a proper amount of wheat embryo and pyridoxal phosphate and by enzyme action of glutamic acid decarboxylase in wheat embryo from glutamic acid, in the solution or the suspension and glutamic acid in the wheat embryo.SOLUTION: A high-concentration solution or dispersion of glutamic acid or a glutamate is made to react with an appropriate amount of wheat embryo on the market and pyridoxal phosphate, under optimal reaction conditions of glutamic acid decarboxylase in wheat embryo, to efficiently prepare a high-concentration solution of &gamma-aminobutyric acid, in innovatively shorter time than that of conventional methods for producing the &gamma-aminobutyric acid.COPYRIGHT: (C)2009,JPO&INPIT【課題】高濃度のグルタミン酸或いはグルタミン酸塩の溶液及び懸濁液に適当量の小麦胚芽とピリドキサルリン酸を添加して反応させ、前期溶液、懸濁液中のグルタミン酸と小麦胚芽中のグルタミン酸から小麦胚芽中のグルタミン酸脱炭酸酵素の酵素作用により、短時間に効率的にγ-アミノ酪酸を生産する。【解決手段】高濃度のグルタミン酸或いはグルタミン酸塩の溶液及び懸濁液に適当量の市販小麦胚芽とピリドキサルリン酸を添加し、小麦胚芽中のグルタミン酸脱炭酸酵素の至適反応条件で反応を行うことによって、従来のγ-アミノ酪酸の生産方法に比べ画期的に短時間で効率的に高濃度のγ-アミノ酪酸溶液を調製できる。【選択図】なし
