PROBLEM TO BE SOLVED: To provide a starch modifier to be added to a starch-containing food product exemplified by flour paste, sauce and soup in order to improve viscosity and palate feeling of the food, and to provide a starch-containing food product given with excellent melting feeling in the mouth and smooth palate feeling in spite of having moderate body feeling. SOLUTION: The starch modifier contains as the active ingredient, polyglyceryl fatty acid ester having 22C saturated fatty acid as the constituent fatty acid.
