PROBLEM TO BE SOLVED: To provide dry foods, even when dried foods with fluidity are reconstituted in water, retaining the shape without getting dissolved or being spread, and production method therefor.SOLUTION: The dry foods according to the present invention are formed by adding thickening polysaccharides to a fluid object obtained by processing a food into a state with fluidity, gelatinizing it, and subjecting the gelatinized object to vacuum freeze drying.
