Shown and described is a process for the extraction and purification of polyphenolic compounds from the fruit of the date palm Phœnix dactylifera. According to the invention, it is intended that the method comprises the steps: of obtaining and preparing the plant material, of solid-liquid extraction using a polar solvent and of recovery of an aqueous extract containing polyphenolic compounds, concentration of polyphenolic compounds in the aqueous extract, purification of the polyphenolic compounds of the aqueous extract by a method of solid phase chromatography, recovery of a purified extract concentrated in polyphenolic compounds. In addition, shown and described is a purified extract of polyphenols derived from the fruit of the date palm Phœnix dactylifera and capable of being obtained by said process. According to the invention, it is expected that the extract comprises, by weight relative to the total weight of the dry purified extract, up to 80% of polyphenolic compounds.Montré et décrit est un procédé d'extraction et de purification de composés polyphénoliques à partir du fruit du palmier dattier Phœnix dactylifera.
