THE PRESENT INVENTION PROVIDES CALCIUM FORTIFIED FERMENTED SOY PRODUCTS BY ADDITION OF 2 — 4 % BY WEIGHT OF CALCIUM SALT, PREFERABLY CALCIUM LACTATE, DURING THE FERMENTATION PROCESS OF SOY BEANS. THE FERMENTED SOY PRODUCT CAN BE SERVED AS IMPORTANT CALCIUM SOURCE, OR DAIRY ALTERNATIVE FOR THOSE WHO ARE LACTOSE INTOLERANCE OR WHO DO NOT GET SUFFICIENT CALCIUM IN THEIR DIETS. THE PRESENT INVENTION PROVIDES AN INEXPENSIVE FOOD PRODUCT WHICH IS RICH IN CALCIUM AT A LEVEL ABOUT 100 MG TO 500 MG PER 100 G SERVING. THUS, ONE CAN EASILY ATTAIN THE RECOMMEND DIETARY AMOUNT (RDA) OF CALCIUM FROM SAID FERMENTED SOY PRODUCTS.
