PURPOSE: Provided is a wasabia japonica dressing material which is provided with various kinds of raw fish(sushi) and is a substitution for side dishes. CONSTITUTION: A wasabia japonica dressing material is characteristically manufactured by the steps of: salting stems and roots of wasabia japonica for 1-3 hours; dipping the salted wasabia japonica in water for 30-40 minutes to remove a bitter taste; grinding the wasabia japonica ; mixing the wasabia japonica juice with soy sauce; and adding chopped radish pickles and seaweeds thereto.
