PROBLEM TO BE SOLVED: To provide a method for producing dried Lentinus edodes by which a peculiar odor possessed by the Lentinus edodes is eliminated without losing or reducing active ingredients such as eritadenine or vitamin D contained in the Lentinus edodes and to obtain the dried Lentinus edodes containing large amounts of the active ingredients without any smell of the Lentinus edodes and a powder of the Lentinus edodes. SOLUTION: Raw Lentinus edodes which is a raw material is heat-treated to thereby inactivate enzymes contained in the Lentinus edodes and the heat- treated Lentinus edodes is then dried at a specific temperature to provide the dried Lentinus edodes when the dried Lentinus edodes is produced.
