The present invention relates to an extract of an asian plantain ( Plantago asiatica L.) and a herb containing an antioxidant and a process for producing the same. More particularly, the present invention relates to a method for producing a plantain comprising the steps of washing and growing a plantain so as to remove in-plant and heterogeneous taste from leaves, seeds or roots of a plantain, and drying and kneading the plantain planted above, A method for producing an extract containing an antioxidant, comprising the step of adding at least one selected from the group consisting of a herb, a cinnamon tree, a jujube, a persimmon leaf and a green tea leaf. The extract of the present invention contains antioxidant substances such as polyphenol, chlorophyll, beta-carotene and flavonoid, and is excellent in DPPH scavenging activity, .본 발명은 항산화 물질을 포함하는 질경이(asian plantain, 학명Plantago asiatica L.)와 허브(Herb)의 추출물 및 그의 제조방법에 관한 것이다. 좀 더 상세하게는 질경이의 잎, 씨앗 또는 뿌리로 부터 풋내와 이질적인 맛을 제거시키기 위하여 질경이를 세척 및 증자하는 단계와, 상기의 증자한 질경이를 건조 및 덖음하는 단계와, 상기의 덖음한 질경이에 허브인 꾸지뽕나무, 대추, 감잎 및 함초 중에서 선택된 어느 하나 이상을 첨가하여 추출하는 단계를 포함하는 항산화 물질이 함유된 추출물의 제조방법이다. 본 발명의 추출물은 폴리페놀(polyphenol), 클로로필(chlorophyll), 베타카로틴(β-carotene), 플라보노이드(flavonoid)등의 항산화 물질을 함유하고 있으며 특히 DPPH 소거 활성이 우수하여 건강기능식품 또는 식품 소재로 제공할 수 있다.
