<；P>；PROBLEM TO BE SOLVED: To provide a fermentation and cultivation method where buckwheat flour is fermented with gram-negative bacteria alone or in mixture living in symbiosis with buckwheat or a lotus root is fermented with the gram-negative bacteria alone or in mixture living in symbiosis with a lotus root and at the same time the bacteria are cultivated, noticing that a component of a gram-negative bacteria cluster attaching to and living in symbiosis with the buckwheat or lotus root which has been eaten for a long time is considered to contribute to functionality or herbal medicinal effect of the buckwheat or lotus root. <；P>；SOLUTION: Materials derived from the buckwheat or the lotus root are fermented with the gram-negative bacteria attached to or living in symbiosis with the buckwheat or lotus root and at the same time the bacteria are cultivated by the fermentation and cultivation method. <；P>；COPYRIGHT: (C)2009,JPO&INPIT
