The present invention relates generally to the field of colouring compositions. One aspect of the invention is a colouring composition having a blue colour. In particular, the present invention relates to a colouring composition having a blue colour wherein the composition comprises anthocyanins, metal ions, and at least one stabilizer. The metal ions are selected from Al(lll), Ca(ll), Cu(ll), Fe(ll), Fe(lll), Mg(ll), Mn(ll), Zn(ll) and combinations thereof while the stabilizers are selected from tannic acid and phospholipids. The invention provides for example a composition comprising the colouring composition and also provides for the use of the colouring composition to colour a food, a nutritional formulation, a food supplement, a beverage, an ink or a pharmaceutical product. A further aspect of the invention is a method of preparing a blue colouring composition.La présente invention concerne généralement le domaine de compositions de coloration. Un aspect de linvention est une composition de coloration ayant une couleur bleue. En particulier, linvention concerne une composition de coloration ayant une couleur bleue dans laquelle la composition comprend des anthocyanines, des ions métalliques et au moins un stabilisant. Les ions métalliques sont choisis parmi Al(III), Ca(II), Cu(II), Fe(II), Fe(III), Mg(II), Mn(II), Zn(II) et leurs combinaisons tandis que les stabilisants sont choisis parmi lacide tannique et les phospholipides. Linvention concerne par exemple une composition comprenant la composition de coloration et concerne également lutilisation de la composition de coloration pour colorer un aliment, une formulation nutritionnelle, un complément alimentaire, une boisson, une encre ou un produit pharmaceutique. Un autre aspect de linvention concerne un procédé de préparation dune composition de coloration bleue.
