PROBLEM TO BE SOLVED: To provide oils and fats for improving creaming properties capable of being used as alternative oils and fats of partially hydrogenated oils and fats of a fish oil, a plastic oil-and-fat composition excellent in creaming properties even when a liquid oil or palm based oils and fats is mainly used, and sugar cream, batter cream or baked confectionery such as a batter cake or a cookie using the plastic oil-and-fat composition.SOLUTION: Oils and fats for improving creaming properties contain 30-60 mass% of palm extreme hardened oils and fats, wherein a mass ratio of S/U in a fatty acid composition is 1.5-4 and a fatty acid content of less than 14C is a low melting point part or a middle melting point part of an interesterified fat transesterifying an oil-and-fat compound of less than 10 mass%. A plastic oil-and-fat composition containing the oils and fats for improving creaming properties, and sugar cream, batter cream or baked confectionery such as a batter cake or a cookie using the plastic fat composition are provided.
