PROBLEM TO BE SOLVED: To provide a method for manufacturing dough containing wheat flour, by which it is possible to efficiently manufacture a wheat flour-containing food that can be cooked with good workability, is prevented from deteriorating in its texture with the passage of time or due to re-cooking, and has a good texture and taste.SOLUTION: A method for manufacturing dough containing wheat flour includes an aging step of subjecting a pregelatinized product to aging treatment and aging the starch contained therein, and a dough preparation step for preparing wheat flour-containing dough (excluding dough for noodles, noodle skins and spring rolls) by using grain flour mainly composed of wheat flour.
