The present disclosure is related to compositions or formulations for the disinfection and/or effective fruit preservation which are contaminated with pathogenic and deteriorating bacteria. The disclosed formulations contain the hibiscus acid obtained from the Roselle plant (Hibiscus sabdariffa) chalices, which can act alone or in combination with other disinfectant agents, such as organic acids and chlorine compounds, and surfactants such as the polysorbate 80. The compositions object of the present invention, are capable of eliminating or inactivating bacteria, including pathogenic bacteria of all types in raw fruits and vegetables, but the highest effectiveness is for mango (Mangifera indica L) and strawberry (Fragaria x ananassa) without altering the nutritional and/or sensitive properties of the same.La presente invención describe composiciones o formulaciones para la desinfección y/o preservación efectiva de frutos contaminados con bacterias patógenos y deterioradores. Las formulaciones descritas contienen a el ácido hibiscus obtenidos de cálices de Jamaica (Hibiscus sabdariffa), el cual puede actuar por si solo o en combinación con otros agentes desinfectantes, como por ejemplo ácidos orgánicos y compuestos del cloro, y tensoactivos, como el polisorbato 80. Las composiciones de la invención son capaces de eliminar o inactivar bacterias, incluyendo bacterias patógenas de todo tipo de frutas y verduras crudas, pero con la más alta efectividad para el mando (Magnifera indica L) y fresa (Fragaria x ananassa) sin alterar sus propiedades nutritivas y/o alimenticias y/o sensoriales.
