PURPOSE: A process of recycling Kimchi juice and residual Kimchi seasoning which remain after preparing Kimchi and have hitherto been discarded is provided which is environment friendly and permits reutilization of Kimchi waste to powdery food. CONSTITUTION: Moisture is removed from Kimchi juice and residual Kimchi seasoning which are collected during or after preparing Kimchi by heating or using a moisture controller, and then the dried Kimchi is ground.
