A process for making an osimilar sausage food product without wrapping, in which an emulsion type sausage paste of gel-like viscosity is prepared; then, the sausage pasta is extruded in portions and by default, which maintain their shape and have at least a generally flat surface; the portions are then cooked both on their upper and lower surface to form their own skin obtained by heat action on the outer sausage paste of the portions, leaving a core contained by the skin itself, which includes sausage paste that has not intervened in the own skin formation; a second cooking stage is then carried out to cause the final cooking of the kernels of the portions with their own skin, thus forming the sausage-type food products; and finally said sausage-type food products are cooled to be packed.
