Provided are a cereal powder, which sustains the natural composition of the edible parts of a cereal as far as possible, holds the health functional components contained in the cereal and can be produced at a low cost, and an application food using the cereal powder, said application food having good appearance and good taste.The powder comprises ground grains of at least one kind of cereal selected from the group consisting of barley and oat. In the cereal powder, the average grain diameter is in the range of 40-100 μm, the content of grains having a grain diameter less than 20 μm is not greater than 20 mass%, the content of grains having a grain diameter in the range of 20-100 μm is in the range of 20-60 mass%, the content of grains having a grain diameter greater than 100 μm and not greater than 500 μm is in the range of 20-60 mass%, and the content of grains having a grain diameter greater than 500 μm is not greater than 5%. The food is produced from a starting material which contains at least 5% of the aforesaid cereal powder. A method for producing the aforesaid cereal powder, said method comprising a step for grinding cereal grains into a coarse powder and a step for finely grinding the thus obtained coarse powder, wherein the fine grinding is conducted by air-stream fine grinding at a material temperature of 50oC or lower.Linvention concerne une poudre de céréales qui préserve autant que possible la composition naturelle des parties comestibles des céréales, préserve les composants bénéfiques pour la santé contenus dans les céréales et peut être produite à faible coût, et une nourriture élaborée à laide de la poudre de céréales, la nourriture ayant une bonne apparence et un bon goût.La poudre comprend des grains moulus dau moins un type de céréales parmi lorge et lavoine.
