PROBLEM TO BE SOLVED: To provide processed meat food to which light but moderate richness and umami are added by processing meat having less fat.SOLUTION: There is provided processed meat food containing fat A by 0.1 to 20 mass%. The fat A is a rape seed oil having a Y+10R value in a Lovibond colorimeter of 20 or more through a deodorization treatment. Furthermore, the processed meat food has the Y+10R value in the Lovibond colorimeter of 30 or more. The fat A in the processed meat food is treated for deodorization at a temperature less than 200°C. There is provided a flavor modification method of the processed meat food by containing the fat A by 0.1 to 20 mass%.
