PROBLEM TO BE SOLVED: To provide a method for processing a globefish without deterioration in freshness caused by deterioration and rotting of internal organs in an allowable processing range of an important matter of inspection for imported foods, and at the same time, with easily recognized to be 'non-toxic' and enhancing freshness-retention of the globefish. SOLUTION: In the method for processing the globefish, the head 1 is cut out from the body 4 with the skin of the abdominal side left when cutting the head and the skin in the back side to the dorsal fin 3, remove the internal organs separated from the body with attaching to the skin on the abdominal side, return the skin torn to the dorsal fin to the original position and cover and restore the globefish to the original state in appearance.
