The present invention relates to a manufacturing apparatus of instant rice which comprises the following: a rice polishing device which removes foreign materials on rice grains and binds rice bran； a washing device which washes and dehydrates the rice by receiving the rice passed through the rice polishing device； a soaking device which soaks the rice passed through the washing device for a predetermined amount of time, and dries the surface of the rice； a container supplying device which stores the rice passed through the soaking device in a container； a high pressure sterilizing device which receives a pallet where a plurality of containers are loaded, and sterilizes the same with high pressure steam； a cooking water supplying device which supplies cooking water into the container； and a low pressure cooking device which cooks the rice using low pressure steam. The time of the pallet remaining in each chamber can be controlled by the kind of the rice, thereby allowing a user to cook various kinds of rice (mixed grains, white rice, brown rice, etc.) using one apparatus.본 발명의 즉석밥 제조장치는 쌀에 붙은 이물질을 제거하고 미강을 뭉쳐지게 하는 연미장치와, 상기 연미장치를 통과한 쌀이 공급되어 쌀을 세척 및 탈수하는 세척장치와, 상기 세척장치를 통과한 쌀을 일정시간 동안 불림함과 아울러 쌀의 표면을 건조하는 불림장치와, 상기 불림장치를 통과한 쌀을 용기에 저장하는 용기 공급장치와, 복수의 용기가 적재된 팔레트가 공급되고 고압 스팀으로 멸균하는 고압 멸균장치와, 용기에 취반수를 공급하는 취반수 공급장치와, 저압 스팀으로 쌀을 취반하는 저압 취반장치로 구성되어, 쌀의 종류에 따라 각각의 챔버에 팔레트가 머무는 시간을 조절할 수 있어 하나의 장치로 다양한 종류의 쌀(혼합곡, 백미, 현미 등)을 취반할 수 있다.
