PROBLEM TO BE SOLVED: To provide a method for inhibiting protein denaturation for decreasing a denaturation degree of protein having a molecular weight of 75,000 to 1,000,000 even after long-term storage.SOLUTION: The method aims to inhibit denaturation of a component (2) caused by reducing sugar in a composition containing reducing sugar and the following components (1) and (2). The components are: (1) at least one kind in amino acids, peptides and proteins having a molecular weight of 75 to 68,000 and (2) a protein having a molecular weight of 75,000 to 1,000,000.
