PROBLEM TO BE SOLVED: To provide a method for producing a water-soluble polysaccharide with a molecular weight easily lowered under mild conditions.SOLUTION: A method for producing a water-soluble polysaccharide with a lowered molecular weight is characterized in that a water-soluble polysaccharide dissolved or dispersed in an aqueous medium is subjected to pressure-heat treatment while being circulated. The pressure-heat treatment is preferably carried out under conditions satisfying 10X+40≤Y≤10X+60 (Y represents a temperature (°C), and X represents pressure and satisfies 8 MPa≤X≤18 MPa).
