PURPOSE: A producing method of health noodles containing mulberry and a medical herb extract, and the health noodles are provided to offer nutrients contained in the mulberry, lotus root juice, and the medical herb extract. CONSTITUTION: A producing method of health noodles containing mulberry and a medical herb extract comprises the following steps: mixing 60-70wt% of flour, 15-20wt% of mulberry, 5-10wt% of lotus roots, and 5-10wt% of medical herb extract with bay salt water; aging the obtained dough for 2 days at 20 deg C; and inserting the aged dough into a noodle maker to obtain the noodles. The medical herb extract is obtained by mixing medical herb compositions with purified water, hot water extracting for 5-8 hours at 70-100 deg C, and filtering before concentrating.본 발명은 오디 및 한방조성물이 함유된 건강국수 제조방법에 관한 것으로, 소맥분 60∼70 중량%, 오디 15∼20 중량%, 황련근(연뿌리) 5∼10 중량%, 한방농축액 5∼10 중량%을 천일염을 녹인 물과 혼합 반죽하여 이틀 동안 20℃ 저온에서 숙성시킨 다음 숙성된 반죽을 국수제면기에 투입시켜 제조됨을 특징으로 한다.
