The present invention prepares a rice cake and puffed rice containing a red ginseng extract which anyone including children can easily access and eat by converting ginseng saponin of red ginseng into low molecule ginseng saponin having high absorption by using acid, heat, and pressure, thereby improving functionality and convenience. To this end, a method for preparing a rice cake containing a red ginseng extract comprises the steps of: preparing red ginseng; preparing a red ginseng concentrate by using the red ginseng; preparing the red ginseng extract containing low molecule ginseng saponin by treating acid to the red ginseng concentrate; and preparing the rice cake by mixing the red ginseng extract with rice powder.홍삼의 인삼 사포닌을 산, 열 및 압력을 이용하여 체내 흡수율이 높은 저분자의 인삼 사포닌으로 변환시키고 아이들을 포함하여 누구나 쉽게 접하고 먹을 수 있는 홍삼 추출물이 함유된 떡 및 뻥튀기의 제조하여 기능성, 편의성을 향상시킬 수 있다.
