PROBLEM TO BE SOLVED: To provide noodle that achieves noodle-making with better productivity as compared with the conventional one and a method for producing the noodle.SOLUTION: The noodle contains wheat flour, an adhesive paste composition and water. The adhesive paste composition contains (A) xanthan gum, (B) locust bean gum and (C) guar gum and additionally contains (D) pregelatinized starch. The method for producing the noodle has an adhesive paste solution preparation step 1 of dissolving the adhesive paste composition in water to produce an adhesive paste solution, a dough production step 2 of mixing wheat flour and the resultant adhesive paste solution and then kneading the wheat flour to produce a noodle dough, a rolling step 3 of rolling the resultant dough of noodle and a cutting step 4 of cutting the rolled dough of noodle.
