A process of making lemon bread is hereby disclosed. The process of honey lemon bread with the following steps. 1 Pour 30 g milk in a medium saucepan and put to boil then add 30 g cold water. 2 Get 5 g liquid from the scalded milk, mix 34 g yeast into liquid when cooled to lukewarm. 3 Add 10 g salt, 100 g sugar, 5O g shortening, and 10 g eggs to the mixture in a saucepan, then add dissolved yeast to the mixture, mix well. 4 Sift and measure 1000 g flour into a large bowl and make a well in the flour, pour the liquid into the well and stir with a large wooden spoon until liquid disappears. 5 Measure 250 g honey syrup and 15 g lemon juice and mixing the dough. 6 Mix the dough with a swinging rotary motion and add minced oregano leaves and punch down again until evenly distributed. 7 Gradually form dough into smooth ball, then knead in bowl for 2 minutes and brush top with 25 g melted shortening. 8 Cover and allow dough to rise at room temperature for 4 1/2 hours until doubled in bulk. 9 Using dough for any sweet bread recipe and 10 Mold dough into pinwheel shape bread and Bake in 350o F.
