PROBLEM TO BE SOLVED: To provide a manufacturing method of a broiled eel-like food as a substitute of broiled eel, having a flavor, a texture, and an appearance closely resembling to broiled eel, made from fish meat relatively abundantly available at low cost, protein, fat, and starch.SOLUTION: A front-side molding including unheated thin-sliced fish meat and minced fish and a back-side molding including minced fish and a black colorant are bonded together to be molded. After that, the molding is boiled or fried and then both sides are baked with or without coating of soy-based sauce for broiled eel. After baking, soy-based sauce for broiled eel is applied, so that a broiled eel-like food is produced.
