This invention addresses the problem of providing a fat composition to be used in infant formula that has a sufficiently low concentration of 3-MCPD, glycidol, and the fatty acid esters thereof, that has excellent storage stability, and that satisfies certain nutritional standards. The above problem is solved by a fat composition for use in infant formula containing linoleic acid and α-linolenic acid, wherein the concentration of 3-monochloropropane-1,2-diol (3-MCPD) is no more than 0.33 ppm and the concentration of glycidol is no more than 0.1 ppm, and the flavor of the fat composition does not easily change in refrigerated storage.Linvention aborde le problème de la fourniture dune composition de matières grasses devant être utilisée dans une préparation pour nourrissons qui possède une teneur suffisamment faible en 3-MCPD, glycidol, et esters dacide gras de celui-ci, qui présente une excellente stabilité au stockage et qui satisfait certaines normes nutritionnelles. Le problème ci-dessus est résolu par une composition de matières grasses à utiliser dans une préparation pour nourrissons contenant de lacide linoléique et de lacide alpha-linolénique, cette composition étant caractérisée en ce que sa teneur en 3-monochloropropane-1,2-diol (3-MCPD) nest pas supérieure à 0,33 ppm, en ce que sa teneur en glycidol nest pas supérieure à 0,1 ppm, et en ce que son arôme ne se modifie pas facilement dans un stockage réfrigéré.3-MCPD及びグリシドール及びそれらの脂肪酸エステルの濃度が充分に低く、更に保存安定性に優れた、栄養学的に一定の基準を満たす育児用調製粉乳に用いられる油脂組成物を提供することを課題とする。リノール酸及びα-リノレン酸を含む育児用調製粉乳に用いるための油脂組成物であって、3-モノクロロプロパン-1,2-ジオール(3-MCPD)濃度が0.33ppm以下でかつグリシドール濃度が0.1ppm以下であり、冷蔵保存で風味変化が発生しにくい油脂組成物により上記課題が解決される。
