PURPOSE: A method of preparing rice containing an herbal component of Scutellariae Radix by soaking rice in a Scutellariae Radix extract and drying is provided. The rice has an efficacy on hypertension, arteriosclerosis, skin disease, headache, gastritis and the like. CONSTITUTION: The method for production of functional rice comprises: washing rice with clean water three times or more; dehydrating; soaking the dehydrated rice in a Scutellariae Radix extract; and drying, in which the soaking and drying process is repeated 2 times. For an example, 30g Scutellariae Radix is extracted in 5L water at 100deg.C for 4hr to give 3,500cc Scutellariae Radix extract, which is added with 2L water and extracted. Then, 800g rice is washed with water 3 to 4 times and soaked in 320g Scutellariae Radix extract for 12hr and dried at 60deg.C.
