PROBLEM TO BE SOLVED: To provide a dehydration dryer without necessitating a high temperature heating medium and complex control, and to provide a dehydration drying process. SOLUTION: In the dehydration dryer which filters slurry supplied into a filtration chamber and dries the same, the filtration chamber contains mutually opposite filter plates, a pair of diaphragms which are installed between the plates and approximately parallel to the filtration plates and a pair of filter clothes which are installed between the diaphragms and approximately parallel to the diaphragms. In the filtration chamber, the dehydration drier is provided in which vacuum steam with a temperature of 35-99°C is supplied as a medium to heat the filter cake while being sucked by vacuum when the filter cake obtained by filtering the slurry is dried. Also the dehydration process is provided. Thus, in accordance with the constitution, the dehydration dryer and the dehydration drying process which do not necessitate the high temperature heating medium and complex control are obtained.
