In addition, the present invention also relates to a production method of a food for a person who has difficulty in chewing and/or swallowing including: mixing the fat and oil composition for a person who has difficulty in chewing and/or swallowing, including a fat and oil; and an emulsifier, wherein the composition having 3 to 18% of SFC in a temperature range from 5 to 25℃ and 1 to 10 HLB value of the emulsifier is rapidly cooled and kneaded and the food for a person who has difficulty in chewing and/or swallowing containing finely chopped or crushed ready to eat foods.
