The present invention provides: a fat and oil composition for a person who has difficulty in chewing and/or swallowing, including a fat and oil； and an emulsifier, wherein the composition having 3 to 18% of Solid Fat Content (SFC) in a temperature range from 5 to 25℃ and 1 to 10 HLB value of the emulsifier is rapidly cooled and kneaded； the fat and oil composition for eating support for the person who has difficulty=in chewing and/or swallowing； a food for a person who has difficulty in chewing and/or swallowing containing finely chopped or crushed ready to eat foods. In addition, the present invention also relates to a production method of a food for a person who has difficulty in chewing and/or swallowing including: mixing the fat and oil composition for a person who has difficulty in chewing and/or swallowing, including a fat and oil； and an emulsifier, wherein the composition having 3 to 18% of SFC in a temperature range from 5 to 25℃ and 1 to 10 HLB value of the emulsifier is rapidly cooled and kneaded and the food for a person who has difficulty in chewing and/or swallowing containing finely chopped or crushed ready to eat foods.
