PROBLEM TO BE SOLVED: To provide a method for easily and economically producing a gel from a natural polysaccharide and to provide a polysaccharide gel produced by the method.
SOLUTION: The method for producing a polysaccharide gel comprises a first step to mix an ionic liquid comprising 1-butyl-3-methylimidazolium chloride with xanthan gum and dissolve the mixture by heating, and a second step to cool and gelatinize the dissolved liquid, and further comprises a third step to leave the obtained polysaccharide gel at rest in water. The polysaccharide gel produced by the production method has high strength durable to a stress of &ge0.2 MPa and/or a strain of &ge40%.
