PROBLEM TO BE SOLVED: To provide a noodle manufacturing method which can manufacture efficiently noodles that have high viscoelasticity and transparent feeling in appearance, and are excellent in aging resistance against aging change.SOLUTION: The noodle manufacturing method of the present invention includes a process in which, after non-pregelatinized raw noodle lines made by a usual method using precursor powder including grain flour is immersed in carbonic water, pregelatinization treatment is applied to the raw noodle lines.
