[MEANS FOR RESOLUTION] A METHOD FOR THE MANUFACTURE OF A FOOD MATERIAL CONTAINING A HIGH AMOUNT OF CYSTEINE, CHARACTERIZED IN THAT, A YEAST EXTRACT IS PREPARED FROM YEAST CELLS CONTAINING Y-GLUTAMYLCYSTEINE, THE EXTRACT IS CONCENTRATED BY CONTROLLING AT THE TEMPERATURE OF AS LOW AS NOT HIGHER THAN 60°C TO PREPARE A FOOD MATERIAL IN A LIQUID FORM WHERE THE SOLID CONCENTRATION IS NOT LESS THAN 10% AND THE FOOD MATERIAL IS KEPT AT 70 TO 130°C.
