PROBLEM TO BE SOLVED: To provide vegetable chitosan (highly dispersible vegetable chitosan) having improved dispersability in water, and to provide a method for producing the same.
SOLUTION: Highly dispersible vegetable chitosan can be produced efficiently by treating vegetable chitosan with a glycosyltransferase (for example, cyclodextrin glucanotransferase). Enzymatic treatment is, preferably, carried out in the coexistence of a sugar donor. The vegetable chitosan is, preferably, obtained by deacetylating chitin contained in carpophores or mycelia of Basidiomycetes, such as Lentinula edodes, Flammulina velutipes, Agaricus bisporus, Grifola frondosa, Pleurotus eryngii, or Lyophyllum shimeji.
