To provide a cheese-like processed food having heat resistant shape retention properties even at high temperature despite substantially containing no milk protein. Furthermore, there is provided a cheese-like processed food which does not contain raw materials which may cause food allergies including milk ingredients.SOLUTION: A processed food having an emulsified structure in which starch swollen by water is covered with countless oil droplet particles refined, containing a specific modified starch, oils and fats, and water is prepared. Furthermore, by giving specific properties to the oil or fat which is a constituent component of the processed food, it improves the stability of the emulsified structure and makes it a cheese-like processed food having good heat-resistant shape retention at high temperature.Selection drawing None【課題】実質的に乳タンパク質を含有しないにもかかわらず、高温下でも耐熱保形性を有するチーズ様加工食品を提供する。更には乳成分をはじめとする食物アレルギーを引き起こす可能性のある原材料を含有しないチーズ様加工食品を提供する。【解決手段】特定の加工デンプンと油脂と水を含有させ、微細化された無数の油滴粒子の周りを水により膨潤したデンプンが覆う乳化構造を有する加工食品とした。更には該加工食品の構成成分である油脂に特定の物性を持たせることで乳化構造の安定性を高め、高温下でも良好な耐熱保形性を有するチーズ様加工食品とした。【選択図】なし
