PROBLEM TO BE SOLVED: To provide a rice SSIIIa mutant in which SSIIIa gene which is an essential material for clarifying functions of rice SSIIIa is knocked out and to provide a starch different from wild type by using the SSIIIa variant and to provide a method for producing the starch by using the SSIIIa variant. SOLUTION: The present invention provides the rice SSIIIa mutant in which a synthase IIIa type (SS IIIa) gene in rice genome is knocked out and enzyme activity of starch synthase IIIa type is lost or remarkably lowered, compared with a wild type, and the starch produced by the rice SSIIIa variant and resulting from loss or lowering of enzyme activity of starch synthase IIIa type and different in physical properties from the wild type.
