PURPOSE: A Kimchi maturating method according to initial material temperature of Kimchi is provided to prevent over-maturation or immaturity of the kimchi by controlling aging time of the kimchi according to the initial material temperature. CONSTITUTION: A Kimchi maturating method according to initial material temperature of Kimchi comprises the following steps: detecting the initial material temperature: extracting aging time of the kimchi according to the initial material temperature; aging the kimchi for the aging time with the predetermined aging temperature; maintaining the temperature of a case with the predetermined aging temperature; keeping the kimchi for waiting time when the temperature of the case is set up; detecting the temperature of the case after passing the waiting time(S18); and measuring the temperature of the case detected for the initial material temperature of the kimchi.
